Malted Milk, Oatmeal, and Chocolate Chip CookiesWhen it comes to desserts, I think oatmeal cookies are vastly under-appreciated. Underdogs to more delicious sounding treats, I’ve found they need only one more ingredient to elevate them to Pinterest ready status: malted milk powder! If you feel intimidated by this ingredient, be reassured; malted milk powder is merely a mixture of barley malt, wheat flour, and milk – you may recognize the flavor from malted milkshakes – and can be used as a sweetener in baked goods. Alone, oatmeal and malted milk powder add their own distinct texture to desserts, but together {along with chocolate, because what’s a recipe without it?!}, they combine to make one powerhouse of a cookie. While this recipe yields plenty, a single batch didn’t last long with my family – I imagine it will be no different with yours!

ingredients

  • 2 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 3/4 cup malted milk powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 1 cup brown sugar
  • 1/2 cup sugar
  • 2 eggs
  • 1/4 cup milk
  • 1 tablespoon vanilla
  • 2 cups dark chocolate chips {I prefer mini chips, but the size is up to you!}

to make

  1. With an electric mixer, combine the butter and sugars until light and fluffy. Beat in the eggs, milk, and vanilla, and mix until combined.
  2. Slowly stir in the oats, flours, malted milk powder, baking powder, baking soda, and salt to the wet ingredients. With a wooden spoon or rubber spatula, add in the chocolate chips by hand.
  3. Line two baking sheets with parchment paper. Scoop out heaping tablespoons of dough, and set on the sheets in four rows of four.
  4. Place the sheets in the refrigerator, and allow the cookies to chill for thirty minutes or up to two hours. Meanwhile, preheat the oven to 350ºF.
  5. Bake the cookies for 12 minutes; they should be light brown around the edges.
  6. Transfer the cookies to a wire rack to cool completely, and enjoy!
