Cookies and Cream Chocolate Chip Cookies

Cookies and Cream Chocolate Chip CookiesSilly as it may be, I find it difficult to pick my favorite ice cream flavor. I’ve long loved chocolate with chocolate sprinkles; the chocolate chunks in cookie dough ice cream please the baker in me; and I adore the tasty pairing of rich vanilla ice cream and Oreo crumbs in the cookies and cream flavor. While I happily order them all throughout the summer, not every one of my favorite flavors translates from an order of ice cream to a batch of cookies as well as the duo of cookies and cream.

Recipes that use cookies to make cookies are not a new invention – Pinterest long ago exploded with these types of creations – but they continue to bring simple delight to the kitchen {it helps that they are super easy to whip up too}. Whether you’re stuck with a bad case of the Monday blue or are just in need of something to satisfy your sweet tooth, I’m convinced there’s nothing that these cookies can’t fix. Just add a glass of milk!

ingredients

  • 4 oz. cream cheese, softened
  • 1/2 cup butter, softened
  • 1 cup light brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 cup malted milk powder
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups crushed Oreos, about 16-19 cookies
  • 1 cup semi-sweet chocolate chips

to make

  1. Using an electric mixer and a large bowl, beat the cream cheese and butter until light.
  2. Mix in the brown sugar and egg on medium speed. Add the vanilla, and beat well.
  3. Slowly stir in the flour, milk powder, baking soda, baking powder, and salt. Fold in the Oreos and chocolate chips.
  4. Cover the bowl with plastic wrap, and transfer it to the fridge to chill for one hour or overnight.
  5. Preheat oven to 350ºF. Grease two baking sheets.
  6. Scoop out mounds of refrigerated dough, about two tablespoons per cookie. Place on baking sheets in four rows of four.
  7. Bake cookies for eleven to twelve minutes; they will be golden brown.
  8. Let cool on sheets before moving to a wire rack. Eat and enjoy!
