Strawberry Rhubarb Crisp

Strawberry Rhubarb CrispI’m sad to share that it has been over two months since I last posted a recipe here on Ciao Bella. Time flies in the spring of the school year, and before I know it, weeks go by without me even baking a dessert! Fortunately, our bountiful backyard rhubarb supply called for a baked good before it overwhelmed our garden, giving me the perfect opportunity to experiment in the kitchen. Crisps are a summer staple; they require minimal effort, kitchen knowledge, or ingredients, but deliver an impressive – and tasty! – final result. There are a number of seasonal fruits to choose from, but chopped strawberries and rhubarb chunks are a combination with which you can never go wrong. With an oatmeal brown sugar topping, this is a recipe guaranteed to win you fans wherever you take it this summer – may I suggest your Fourth of July celebration?! :)

Strawberry Rhubarb CrispStrawberry Rhubarb Crisp Loosely adapted from Ina Garten

ingredients

  • 3 to 4 cups fresh rhubarb, diced in 1/2 inch chunks {about 4 to 5 stalks}
  • 2 cups chopped fresh strawberries
  • 1 1/4 cups granulated sugar
  • 1 1/2 teaspoons grated lemon zest
  • 1 tablespoon cornstarch
  • 1/2 cup orange juice
  • 1 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 teaspoon salt
  • 1 cup quick-cooking oatmeal
  • 12 tablespoons cold butter, diced

to make

  1. Preheat oven to 350ºF.
  2. In a large bowl, combine the rhubarb, strawberries, 3/4 cup granulated sugar, and lemon zest.
  3. In a liquid measuring cup, dissolve the cornstarch in the orange juice. Mix into the fruit mixture, and pour the fruit into a 10-inch pie dish.
  4. Using an electric mixer with a paddle attachment, stir together the flour, remaining 1/2 cup granulated sugar, light brown sugar, salt, and oatmeal.
  5. Add in the butter, and combine until the mixture resembles crumbs. Sprinkle over the fruit mixture completely.
  6. Put the pie dish on a baking sheet {the crisp may overflow, so this protects your oven!}, and bake for one hour. The fruit will be bubbling, and the topping will be a golden brown.
  7. Let cool, and enjoy!
