Brownie Bites


Brownie BitesBite-size desserts have an appeal that’s all their own. They are easy to make, simple to serve, and best of all, small enough to eat more than one! :) I love making brownies, but even baking classics can become boring. Thankfully, brownie “bites” provide a change of pace without much more effort {perfect for time-crunched tech weeks, as I am in right now}. Rich in chocolate flavor, these treats require a mini muffin pan; just bake, pop them out, and you’re good to go! For added fun, I dusted confectioner’s sugar on top but that step can easily be skipped if you’re in a rush. You’ll soon learn that brownies need not be big to be delicious.

Brownie Bites Adapted from Smitten Kitchen


  • 1/2 cup butter, melted
  • 3 tablespoons vegetable oil
  • 9 tablespoons cocoa powder
  • 1 1/3 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1/4 teaspoon salt
  • 2/3 cup all-purpose flour

to make

  1. Preheat oven to 350ºF.
  2. Mix together the melted butter, oil, and cocoa powder. Stir in the sugar, eggs, and vanilla.
  3. Add in the salt and flour to the mixture, and mix thoroughly to avoid any flour pockets.
  4. Grease a mini muffin pan. Spoon batter into each mini muffin cup.
  5. Bake for fifteen to seventeen minutes, or until a toothpick comes out clean.
  6. Let cool for at least ten minutes before removing from the pan; these can break easily if you’re not careful.
  7. Enjoy! :)
