Hi!Scones have quickly become one of my favorite things to bake! There are so many possibilities on what you could add to a scone; I personally love using the fruits and flavors of the season. Lemons and blueberries, in this case, seemed perfect for the late spring and early summer feeling I have right now. Tasty and quick to whip up, I was pleasantly surprised at how much I enjoyed these! I decided to forgo the lemon glaze from the original recipe and instead, went with a simple dusting of confectioner’s sugar. This decision was made, of course, after I took the photos, so let’s just imagine, yes?! :) To make things a little healthier, I also swapped out the heavy cream for half-and-half. If you want to make the recipe even less decadent, you could try to substitute 1/3 of the all-purpose flour with whole wheat. No matter what variation you end up going with, these scones will easily become a favorite breakfast treat!
Lemon Blueberry Scones Adapted from Pastry Affair
ingredients
- 2 cups all-purpose flour
- 2 tablespoons sugar
- 1 tablespoon baking powder
- 2 lemons, zested
- 1/4 teaspoon salt
- 1 stick butter, cubed
- 1/2 cup half-and-half
- 1 egg
- 1 cup fresh blueberries {although I have not tried it, I am sure frozen would work just as well!}
- Confectioner’s sugar, for sprinkling on top
to make
- Preheat oven to 350ºF.
- In a large bowl, stir together the flour, sugar, baking powder, lemon zest, and salt.
- Using a pastry cutter or two knives, cut in the butter. Your mixture will look like coarse crumbs!
- Add in the half-and-half and the egg.
- Stir in the blueberries, taking care to burst as little blueberries as you can :)
- Grease a baking sheet.
- On a lightly floured surface, roll the dough into a circle about an inch thick. Cut the circle in half vertically and horizontally; then cut each corner into two triangles. I find a good kitchen knife works best for this step! Transfer the scones to the baking sheet.
- Bake the scones for twenty minutes, or until they are lightly browned.
- Let the scones cool before sprinkling confectioner’s sugar on top {if desired}. Enjoy!
