Lemon Blueberry Scones

There are so many possibilities on what you could add to a scone; I personally love using the fruits and flavors of the season. Lemons and blueberries, in this case, seemed perfect for the late spring and early summer feeling I have right now. Tasty and quick to whip up, I was pleasantly surprised at how much I enjoyed these! I decided to forgo the lemon glaze from the original recipe and instead, went with a simple dusting of confectioner’s sugar. This decision was made, of course, after I took the photos, so let’s just imagine, yes?! :) To make things a little healthier, I also swapped out the heavy cream for half-and-half. If you want to make the recipe even less decadent, you could try to substitute 1/3 of the all-purpose flour with whole wheat. No matter what variation you end up going with, these scones will easily become a favorite breakfast treat!

  • 2 cups all-purpose flour
  • 2 tablespoons sugar
  • 1 tablespoon baking powder
  • 2 lemons, zested
  • 1/4 teaspoon salt
  • 1 stick butter, cubed
  • 1/2 cup half-and-half
  • 1 egg
  • 1 cup fresh blueberries {although I have not tried it, I am sure frozen would work just as well!}
  • Confectioner’s sugar, for sprinkling on top

to make

  1. Preheat oven to 350ºF.
  2. In a large bowl, stir together the flour, sugar, baking powder, lemon zest, and salt.
  3. Using a pastry cutter or two knives, cut in the butter. Your mixture will look like coarse crumbs!
  4. Add in the half-and-half and the egg.
  5. Stir in the blueberries, taking care to burst as little blueberries as you can :)
  6. Grease a baking sheet.
  7. On a lightly floured surface, roll the dough into a circle about an inch thick. Cut the circle in half vertically and horizontally; then cut each corner into two triangles. I find a good kitchen knife works best for this step! Transfer the scones to the baking sheet.
  8. Bake the scones for twenty minutes, or until they are lightly browned.
  9. Let the scones cool before sprinkling confectioner’s sugar on top {if desired}. Enjoy!
