Chocolate Cranberry Scones

Hello!

Chocolate-Cranberry-Scones-1I think it’s a universal fact that cranberry anything tastes best in November. Is it just me?! Truly, though, I love using cranberries in baked goods this time of year. {Cranberry Relish remains an old favorite!} So, when my mom bought a bag of them this past weekend, I knew I had to find something scrumptious to use them for! I stumbled upon a recipe for Cranberry Scones by Martha Stewart. I often find that you can never go wrong with a Martha recipe, and this one sure lived up to that expectation. The dough held together beautifully, and the colors make for a wonderful presentation. There was nothing wrong with the original recipe, but with my family, chocolate is a necessary addition :) Finally, cranberries and orange are such a winning combination, thus I added orange zest to my topping. What are your take on cranberries, friends?

Chocolate Cranberry Scones Adapted from Martha Stewart

ingredients

  • 2 cups all-purpose flour
  • 5 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 6 tablespoons butter, cut into small pieces
  • 2/3 cup plus 1 tablespoons half-and-half
  • 1/2 cup cranberries
  • 3/4 cup dark chocolate chips {more or less based on your preferences}

for the topping

  • 1 tablespoon sugar
  • 1 tablespoon orange zest
  • 1 tablespoon half-and-half

to make

  1. Preheat oven to 425ºF.
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt.
  3. Cut in the butter with a pastry blender or two knives. The mixture should resemble course crumbs.
  4. Stir in the 1/2 cup half-and-half until moistened. Fold in the cranberries and chocolate with a rubber spatula.
  5. If your dough is not holding together, add in 1 more tablespoon of half-and-half. I found that this extra moisture did wonders!
  6. Grease a baking sheet.
  7. Knead the dough on the baking sheet, and roll flat into a 1-inch thick rounded shape.
  8. Cut into 8 wedges, and separate. Brush with one tablespoon half-and-half, and then sprinkle with mixed sugar and orange zest.
  9. Bake for 12 to 15 minutes, or until golden brown. Your house will smell lovely at this point! :)
  10. Let cool, and enjoy.

Have a terrific night! I am so excited for the return of Glee.
