Ignoring the fact that today’s temperatures reached the 90’s {I am not a big fan of this weather at ALL. Thankfully, I just have one more day of it!}, can we all agree that summer is behind as now? I feel now that we are in the second week of September, that it is socially acceptable to go into complete fall mode :) Anyhoo, to kick off my autumn baking season, because truly, besides the holidays, there’s no better time to bake, I made a batch of these delicious Apple Cinnamon Scones. I’ve made scones in the past, and they were a big hit, so I am having fun finding new ones to try out on my family! These were gone in just a couple of days, so I would definitely recommend doubling the recipe if you know your family will like them. An added bonus? Your kitchen smells amazing after you bake these. It is a true fall recipe.
Apple Cinnamon Scones Adapted from King Arthur Flour
ingredients
- 2 1/4 cup all-purpose flour
- 1/2 cup whole wheat flour
- 1/3 cup sugar
- 3/4 teaspoon salt
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 cup butter
- 3/4 cup chopped apple, in 1/4” to 1/2” pieces
- 3/4 cup white chocolate chips {optional, but I recommend adding more apple if you don’t add the chocolate.}
- 2 eggs
- 1/2 cup applesauce
to make
- In a large bowl, mix together the flours, salt, baking powder, and cinnamon.
- Work in the butter with your fingers or a pastry cutter. The dough should be unevenly crumbly.
- Whisk in the eggs and applesauce. Stir in the apples and chocolate chips. At this point, the dough will be barely holding together. You will be frustrated, believe me, but don’t give up!
- Flour a baking sheet. Place the dough on top, and divide into two circles about 3/4 inch thick. Using a knife, cut each circle into six wedges.
- Carefully separate each wedge before placing in the fridge for thirty minutes to chill.
- Preheat oven to 425ºF.
- Bake for 15 minutes, or until golden brown. The edges will be firm.
- Let cool before serving, and enjoy! :)
