Zucchini Bread

Zucchini-BreadI strangely love working with zucchini in baked goods. I think it adds lots of flavor with minimal effort! Similar to Banana Bread, this recipe is perfect for a delicious breakfast, but it would equally work as a light afternoon snack. I love the addition of chocolate because for me, anyways, it is a yummy combination with the zucchini, but feel free to omit it. {Seriously though, why would you get rid of the chocolate? :)} Finally, this makes two loaves of bread, so I recommend wrapping one up for later in the week or you could give it as a lovely springy gift!

  • 1/4 teaspoon nutmeg
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup chocolate chips

to make

  1. Preheat oven to 350ºF.
