I strangely love working with zucchini in baked goods. I think it adds lots of flavor with minimal effort! Similar to Banana Bread, this recipe is perfect for a delicious breakfast, but it would equally work as a light afternoon snack. I love the addition of chocolate because for me, anyways, it is a yummy combination with the zucchini, but feel free to omit it. {Seriously though, why would you get rid of the chocolate? :)} Finally, this makes two loaves of bread, so I recommend wrapping one up for later in the week or you could give it as a lovely springy gift!
Zucchini Bread Adapted from Smitten Kitchen
ingredients
- 3 eggs
- 1 cup vegetable oil
- 1 3/4 cups sugar
- 2 cups grated zucchini
- 3 cups all-purpose flour
- 3 teaspoons cinnamon
- 1/4 teaspoon nutmeg
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1 teaspoon salt
- 1 cup chocolate chips
to make
- Preheat oven to 350ºF.
- Grease two 8 by 4 inch pans, and set aside.
- In a large bowl, mix together the eggs, oil, and sugar. Stir in the zucchini.
- Add the flour, cinnamon, nutmeg, baking soda, baking powder, salt, and chocolate chips.
- Divide the batter into the two pans, and spread with a spatula.
- Bake for 60 to 70 minutes or until a toothpick inserted in the center comes out clean.
- Enjoy!
