Peanut Butter Sandwich Cookies. In other words, deliciousness :) Incredibly rich, this cookie is ideal for peanut butter and chocolate lovers, but you’re sure to win anyone over if you hand them one of these with a smile. Although crumbly, it’s important not to lose hope when rolling these out, because otherwise you’ll miss out on some very yummy cookies. The size is up to you. If you don’t mind breaking them in half {you’ll want to because these are rich}, go with a larger cookie cutter, but if you’re more of a bite-sized type of person, I would suggest the smaller cookie cutter route. Either way, you can fill them up with the filling below, or for added fun, try some chocolate peanut butter.

Peanut Butter Sandwich Cookies Adapted from The Smitten Kitchen Cookbook

ingredients

for the cookies

  • 8 tablespoons butter
  • 1 cup creamy peanut butter
  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 egg
  • 1 1/2 cups all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt

for the filling

  • 1 cup chocolate chips
  • 3 tablespoons peanut butter
  • 2 tablespoons butter

to make

  1. In a large bowl with an electric mixer, beat together the butter, peanut butter, and sugars until combined. Add in the egg.
  2. Beat in the flours, baking soda, and salt.
  3. Divide the dough into two large parts and roll into a large ball. Transfer each part to a piece of plastic wrap and wrap them up.
  4. Freeze the dough for 30 minutes to an hour, or until firm.
  5. Preheat your oven to 350ºF.
  6. Grease two baking sheets.
  7. Roll out the dough {it will be crumbly!} and cut out your desired shape. Continue until all dough is used.
  8. Transfer the cookie shapes to the baking sheets. Bake for 10 minutes, or until they are puffed and slightly golden.
  9. While the cookies are cooling, melt the chocolate, peanut butter, and butter until smooth. Transfer the filling to the fridge, stirring frequently, until it is thick and spreadable.
  10. Use a butter knife {of a pastry bag} to place a bit of filling on one cookie. Sandwich another cookie on top and press so the filling reaches the edges. Repeat.
  11. Let the cookies set before enjoying!
