A quiche is surprisingly easy to whip up, and you end up with a delicious and satisfying result! :) Like any breakfast food, you can either go down the sweet or savory route. This recipe is definitely savory, brimming with plenty of spinach, cheese, and bits of bacon. As you get more comfortable with the recipe, feel free to add and subtract whatever you want. I’m sure that this would be just as tasty without the bacon or other types of vegetables. To save time, I recommend using a store-bought pie crust. {especially because making a good pie crust requires patience and practice!} However you fit it to meet your tastes, this is sure to be a pleaser at breakfast at dinner!
Spinach Quiche Adapted from Smitten Kitchen
ingredients
- 1 3-ounce package cream cheese, room temperature {bonus points if it is reduced fat!}
- 1/3 cup half and half
- 3 eggs
- 1 10-ounce package frozen chopped spinach, thawed and drained
- 1/2 cup grated cheddar
- 1/4 cup grated Parmesan
- 4 to 6 green onions, thinly sliced
- 1 1/2 bacon strips, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 pie crust
to make
- Preheat oven to 425ºF.
- Beat together cream cheese, half and half, and eggs.
- Mix in the remaining ingredients.
- Pour mixture into the pie crust.
- Bake for about 25 minutes.
- Let cool before serving, and enjoy!

Wow that looks delish! My mom makes the best quiches, I’ve never attempted to make one without her but I might need to make an exception for this!!
