Chocolate Chip Cookie Dough Truffles

It’s July, which means, only one thing… Birthday month! :) Hehe. Just kidding. July is really the month of summer. There’s cookouts, the Fourth of July, late nights outside, endless air conditioning, ice cream, swimming, the list goes on and on! Needless to say, July also brings that awful heat and pesky mosquitoes. What’s your favorite part of July?

Unfortunately, in the summer, I can’t bake too often because of the heat, so I try to take advantage of the cool days while I can. With a stretch of rainy weather last week, I was able to make a recipe I was just dying to try out: Chocolate Chip Cookie Dough Truffles! While my photos don’t do them justice, the result is a rich, tasty treat. You can decorate them in any which way, but I decided to drizzle some melted chocolate that was leftover from baking some cookies. Bakerella, for example, decorated them to look like Chocolate Chip Cookies by using peanut butter candy coating. There’s so many possibilities, so be creative! If you do have any leftover melted chocolate from this little project and some sprinkles nearby, you could also make some Chocolate Covered Pretzel Sticks. Both of these recipes are sure to be a hit with friends!

Chocolate Chip Cookie Truffles Adapted from Bakerella

  • 1/2 cup butter, room temperature
  • 1/4 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 tablespoons milk
  • 3/4 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 1/2 teaspoon salt
  • 1/2 cup mini chocolate chips
  • Chocolate {for drizzling}

to make

  1. In a large bowl, beat butter and sugars with an electric mixer.
  2. Add the milk.
  3. Mix in the flours and salt.
  4. Stir in the chocolate chips by hand.
  5. Roll the dough into a large bowl, and cover it in plastic wrap. Place the dough in the fridge to chill for 30 minutes or until firm.
  6. Once firm, roll or scoop the dough into about one-inch balls.
  7. Place the balls on a baking sheet lined with parchment paper and freeze for 15 minutes to an hour.
  8. Melt about 1/2 cup chocolate chips {maybe a little more depending on the amount of truffles you made} in the microwave.
  9. Remove the truffles from the freezer and DRIZZLE! :) Using a spoon, drizzle the chocolate until desired.
  10. If you would like to dunk the truffles, one at a time, dip it into the bowl of chocolate.
  11. Whether you dunked or drizzled your truffles, let the them set. {I let mine dry overnight.}
  12. Once set, you can refrigerate the truffles in an airtight container.
  13. Yummy!

Have a delightful afternoon!

Bella :)

 *Guys, I swear, this summer vacation thing is turning my brain to mush. If anything doesn’t make sense in the directions, let me know!
