Pancakes

Hello!

Before I begin, I would like to apologize for the lack of pictures lately! The next recipe will have definitely have a few, I promise :)

Anyhoo, pancakes are essential for breakfast at dinner! {They are pretty good at breakfast too.} They are so easy to whip up, and perfect for lazy mornings. I love the fact that they are so versatile, but are just as tasty on their own. I enjoy mine with chocolate chips, but you could have blueberry pancakes, pancakes drizzled with syrup, pancakes topped with strawberries, the possibilities are endless! You can easily alter this recipe to fit your needs. If you don’t have an electric griddle on hand, a skillet works just as well. Below, the recipe is tripled, but feel free to make the original amount by dividing the ingredient measurements by three. Make a bunch, as these are sure to be eaten up quickly!

Pancakes Adapted from Martha Stewart

ingredients

  • 1 cup whole wheat flour
  • 2 cups all-purpose flour
  • 6 tablespoons sugar
  • 6 teaspoons baking powder
  • 3 teaspoons salt
  • 3 cups milk
  • 6 tablespoons butter; melted
  • 3 eggs
  • Vegetable oil {for griddle}
  • Mix-ins, such as chocolate chips or blueberries {Optional}
  • Toppings, like confectioners’ sugar or bananas {Optional}

to make

  1. Whisk together butter, milk and eggs in a large bowl.
  2. Mix in flours, sugar, baking powder, and salt. Do not over mix, a few small lumps are fine!
  3. Heat an electric griddle,
  4. Moisten griddle with an oiled paper towel.
  5. To make a pancake, spoon 2 to 3 tablespoons of batter onto griddle, using the back of the spoon to make it round.
  6. Add a sprinkle of desired mix-ins.
  7. Cook 1 to 2 minutes more, until browned, then flip with a spatula. Continue to cook for 1 to 2 minutes.
  8. Transfer to a plate and add a pot cover to keep them warm.
  9. Continue making pancakes until all batter is used.
  10. Top pancakes with desired toppings. Confectioner’s sugar and strawberries are a delightful combination!
  11. Yum!

Did you catch the return of Glee last night? Wasn’t it the BEST episode in a long time? And that cliffhanger! Oh. My. And now they make us wait for two weeks until it is on again! {sniffle} Oh, well. I can wait.
