Banana Spice Muffins

Banana Bread has always been a favorite of mine, but when we need to make a quick breakfast treat, my mom or I often change the recipe for muffins. So, I was delighted to find a recipe that is specifically for banana muffins. With a touch of different spices, the banana muffins needed a good helping of chocolate, in my opinion :) Chocolate or not, these are extremely delicious, and are sure to wake up anybody. I suggest having one with a glass of milk or some yogurt. Yum!

Banana Spice Muffins Adapted from How Sweet It Is

ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 egg
  • 1/3 cup brown sugar
  • 1/4 cup butter, melted
  • 2/3 cup milk
  • 1 1/2 teaspoon vanilla
  • 2 ripe bananas
  • Heaping 1/2 cup chocolate chips

to make

  1. Preheat oven to 350ºF.
  2. Whisk together egg and brown sugar until smooth. Add in butter and milk.
  3. Stir in mashed bananas.
  4. Slowly add in dry ingredients.
  5. Grease two muffin tins.
  6. Fill each muffin cup 2/3 the way full.
  7. Bake for 15 minutes, or until slightly golden.
  8. Let cool, then enjoy!
